Caramelized Onion & Gorgonzola Flatbread with Balsamic Reduction

It’s like a palette pleasing pizza and a tasty tart had a flavorful flatbread baby. And baptized it with balsamic reduction and garnished it with greens.

Flatbread

Caramelized Onions

  • 4 yellow onions, halved and thinly sliced
  • 2 teaspoons butter
  • 4 teaspoons olive oil
  • Large pinch Kosher salt
  • 1 teaspoon sugar
  • fresh cracked black pepper

Balsamic Reduction:

Flatbread Toppings:

  • 8 oz. fresh mozzarella, sliced
  • 3/4 cup crumbled Gorgonzola cheese
  • 1/2 cup micro greens

Instructions

Flatbread:

  1. Add yeast to a large bowl. Pour water over yeast and set aside for 5 minutes. Then use a fork to stir in flour, salt and oil. Once the dough starts to pull away from the sides of the bowl and come together, turn it out onto a lightly floured surface. Knead dough for 5 minutes. Coat ball of dough with olive oil, place in the large bowl, cover with saran wrap or a clean kitchen towel. Let rise for 1 hour in the warmest part of your kitchen.

Caramelized Onions:

  1. Heat butter and oil in a large saute pan over medium heat. Add onions and and stir to coat in oil. Grab a glass of wine and a magazine and plop yourself in front of the stove because you are going to be here for a while. You will cook the onions for 60 minutes total, stirring every 4-5 minutes or so. After they’ve cooked for 10 minutes add a pinch of salt. After they’ve cooked for 40 minutes add a teaspoon of sugar. After they’ve finished cooking for 60 minutes and are a gorgeous dark brown color, add salt and pepper to taste, then set aside.

Balsamic Reduction:

  1. Add balsamic vinegar to a small saucepan over high heat. Bring to a boil, turn heat down and simmer for 10-12 minutes or until the balsamic has reduced and will coat the back of a spoon. The consistency should be similar to syrup.

Assemble and Bake:

  1. Preheat oven to 450 degrees. Divide your dough ball in half and lightly flour your work surface. Roll each half into a rectangle about 8×12 inches. Transfer to a parchment lined baking sheet and poke surface of the dough all over with a fork. Bake for 5 minutes, then remove from oven and gather your ingredients.
  2. Layer onions, mozzarella and Gorgonzola, dividing everything evenly between the two flatbreads. Bake for 10-12 minutes or until the edges are golden brown and the cheese is melted.
  3. Drizzle flatbread with balsamic reduction, garnish with micro greens and enjoy!
