This chickpea chili is loaded with veggies, beans, and plenty of spice in a broth of coconut milk, vegetable broth, and salsa verde.

*EASY FAMILY DINNER*

Ingredients:

– olive oil – onion – red bell pepper – jalapeno – garlic – ground cumin – chili powder – coriander – dried oregano – garbanzo beans – pinto beans – salsa verde – coconut milk – vegetable broth – lime juice – salt – pepper

Saute onion, red pepper, and jalapeno

Add garlic, herbs, and spices

Cook for a minute or so

Add garbanzo beans, pinto beans, salsa, and coconut milk

Bring to a simmer and cook for about 10 minutes

Add lime juice and garnish with your favorite chili toppings
