Ingredients:

– olive oil – carrots – celery – yellow onion – garlic – curry powder – ground ginger – ground turmeric – vegetable broth – coconut milk – uncooked rotini pasta – garbanzo beans  – bay leaves – apple cider vinegar – salt – pepper – parsley for garnish

Saute onion, carrot, and celery

Add spices and garlic

Deglaze the pan with veggie broth

Add chickpeas, uncooked pasta, and coconut milk

Add veggie broth and bay leaves

Simmer until noodles are cooked through

Add apple cider vinegar, season to taste, and enjoy!
