This Vegetarian Skillet Pot Pie is a veggie-loaded twist on the classic chicken pot pie! It's filled with tons of vegetables - and chickpeas in place of chicken - in a quick herb cream sauce and topped with refrigerated biscuits, making it the perfect one-pot weeknight dinner!

Ingredients:

– olive oil – yellow onion, celery, and carrot – garlic – dried thyme and sage – butter – flour – veggie broth – heavy cream – frozen peas – garbanzo beans – biscuit dough – 1 egg

Saute onion, carrot, and celery

Add butter, garlic, and herbs

Add flour and cook

Stir in cream and veggie broth

Add peas and chickpeas

Cook until it thickens up a bit

Top with biscuits and brush with butter

Bake for 15 minutes, garnish and enjoy!
