One Pan Veggie Pot Pie

This veggie pot pie is a vegetable-loaded twist on the classic chicken pot pie! It's filled with tons of vegetables and chickpeas in a quick herb cream sauce. Then it's topped with refrigerated biscuits, making it the perfect weeknight dinner!

Ingredients

- mirepoix - garlic - dried herbs - butter - flour  - veggie broth - heavy cream - frozen peas - garbanzo beans - refrigerated biscuit dough

Sauté onions, carrots, and celery

Add garlic, thyme, sage, and butter

Add flour

Stir in heavy cream and vegetable broth

Add peas and chickpeas

Stir and cook for 1 minute

Add biscuit dough and brush with egg

Bake for 15 minutes covered with foil then another 15 without. Garnish with fresh parsley
