Ingredients

  • 16 ounce can refried beans
  • 4 ounces cream cheese, room temperature
  • 1/2 cup sour cream
  • 4 ounce can diced green chiles
  • 2 tablespoons taco seasoning
  • 4 ounces pepperjack cheese, shredded
  • 1/2 cup halved grape tomatoes
  • sliced green onion
  • fresh chopped cilantro
  • tortilla chips for serving

Instructions

  1. Heat oven to 350 degrees.
  2. Add refried beans, cream cheese, sour cream, green chiles, and taco seasoning to a large bowl
  3. Mix until well combined and smooth. 
  4. Transfer to an 8×8 baking dish.
  5. Top with shredded pepperjack cheese. 
  6. Cover with foil and bake for 25 minutes.
  7. Remove foil and set the oven to broil. Cook for 1-2 minutes or until the cheese on top starts to turn dark golden brown. 
  8. Top with tomatoes, green onion, and cilantro, and serve warm with tortilla chips.
