Ingredients

Scale
  • 19 ounce package brats (5 bratwursts)
  • 2 (12 ounce) bottles beer (lager or pale ale)
  • 1 large onion, sliced
  • brat buns
  • sauerkraut and mustard for serving

Instructions

  1. Add brats, beer, and onions to a large pot. Turn heat to medium-high and bring to a gentle simmer. Reduce heat to low and simmer gently for 10-15 minutes.
  2. While the brats simmer, heat the grill or round grill pan to medium-high.
  3. Transfer cooked brats to the grill. Grill for about 5-7 minutes, rotating occasionally until they’ve got a nice char on the outside.
  4. Let the onions continue to gently simmer on the stove until the brats are done cooking. This is also a great time to heat the sauerkraut in a saucepan.
  5. Nestle grilled brats into the buns and top with mustard, sauerkraut, and braised onions. Enjoy!

Notes

    • Don’t boil the beer — keep it at a gentle simmer to avoid bursting the brat casings.

    • For extra flavor, try searing the onions in the pot before adding the beer and brats.
