Sesame Ginger Braised Chuck Roast

This orange sesame ginger braised beef recipe is rich, sweet, savory, gingery, and citrusy. The best part is that after a quick sear on the stove, the oven does all the work for you! The beef is juicy and fall-apart tender, and all you have to do is spoon it over rice and veggies with plenty of extra sauce!

Ingredients

  • 3-4 pound beef chuck roast
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced into large wedges
  • 10 cloves garlic, smashed
  • 2 tablespoons freshly grated ginger
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 1 tablespoon toasted sesame oil
  • 14.5 ounce can beef broth
  • Kosher salt
  • fresh cracked black pepper
  • sliced green onion and sesame seeds for garnish
  • white rice and roasted veggies for serving

Instructions

  1. HEAT IT UP. Preheat oven to 325 degrees.
  2. PREP THE CHUCK. Cut chuck roast into large 2-3 inch pieces. Pat chuck roast dry and season moderately on all sides with plenty of salt and pepper.
  3. QUICK SEAR. Heat oil in a 5 quart braising pan over medium-high heat. Sear chunks of chuck roast until a golden brown crust forms on all sides. Cook in batches and add more oil as needed. Remove and set aside.
  4. SAUTE THE AROMATICS. Add onion and a couple pinches of salt and pepper and cook for 2 minutes, stirring occasionally. You can add more oil also if the pan seems too dry. Add garlic and ginger along with a couple pinches of salt and pepper. Cook, stirring frequently, for 1 minute.
  5. DEGLAZE THE PAN. Stir in a splash of beef broth and use it to scrape all the yummy bits off the bottom of the pan. 
  6. FINISH THE BRAISING LIQUID. Stir in orange juice, orange zest, soy sauce, brown sugar, rice vinegar, sesame oil, and the remaining beef broth to the pan along with a couple pinches of salt and pepper.
  7. NESTLE + BRAISE. Nestle the seared chuck roast into the pan. Cover and braise in the oven for 3-3.5 hours or until the beef shreds easily with two forks.
  8. GARNISH + SERVE. Serve shredded beef over white rice. Drizzle with braising sauce and garnish with green onion and sesame seeds. Enjoy!

Notes

  • Cut the beef into large chunks before searing. This creates more surface area for browning and more flavor in the sauce.
  • Keep about an inch or so of space between the pieces of beef, so they have room to sear and don’t end up steaming.
  • Don’t rush the sear. A deep golden crust builds flavor that carries through the entire dish. You’ll know the dark golden brown crust has formed when the meat easily detaches from the pan. If it’s sticking to the pan, it’s either not cooked enough or there wasn’t enough oil in the pan.
  • Leftovers make unreal rice bowls with roasted veggies and a jammy egg.
