Cheesy Chicken and Rice Casserole

This cheesy chicken broccoli rice casserole is the ultimate comfort food with tender chicken, creamy rice, and melty cheese all baked in one dish. It’s an easy, family-friendly meal that’s perfect for busy weeknights and it takes just about 10 minutes to prep. 

Ingredients

  • 3 (10.5 ounce) cans cream of chicken soup
  • 2 cups milk
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups Minute Rice
  • 12 ounces frozen broccoli florets
  • 2 cups shredded rotisserie chicken
  • 8 ounces shredded mild cheddar cheese, divided
  • Kosher salt
  • fresh cracked pepper
  • fresh chopped parsley and sliced green onions for garnish

Instructions

  1. Heat oven to 375 degrees.
  2. Add cream of chicken soup, milk, Italian seasoninggarlic powderonion powder, and a few large pinches of salt and pepper to a 5 quart braising pan or 9×13 baking dish. Stir until well combined and smooth.
  3. Add Minute Rice, frozen broccoli, rotisserie chicken, and half the shredded cheese. Stir until well combined.
  4. Cover with foil and bake for 60 minutes.
  5. Remove foil and top with the remaining shredded cheese and broil for a couple minutes until the cheese melts.
  6. Garnish with parsley and green onions and serve warm!

    • Don’t Skip the Foil: Covering the dish ensures the rice cooks evenly and absorbs all the flavors. Resist the urge to peek! The steam that’s created is what cooks the rice and releasing it is going to interrupt the cooking process.

    • Shred Your Cheese: Shred your own cheese for the best melt and flavor.

    • Try Other Veggies: Use any 12 ounces of frozen veggies – peas and carrots, mixed veggies, etc.
