- 1 medium onion, petite diced
- 6 cloves garlic, minced
- 2 teaspoons Italian seasoning
- 2 tablespoons tomato paste
- 2 cups beef stock
- 1 tablespoon Worcestershire sauce
- 1 (.87 ounce) packet brown gravy
- 1 (2 ounce) packet Lipton onion soup mix
- 12 ounces frozen peas and carrots
- 1/4 cup heavy cream, optional
- 3.5-4 cups warm mashed potatoes (or 48 ounces storebought prepared mashed potatoes)
- Kosher salt
- fresh cracked pepper
Instructions
- Heat oven to 400 degrees.
- Heat a large saute pan or 5 quart braising pan over medium-high heat. Add ground beef and a couple large pinches of salt and pepper and cook, crumbling it with a spatula until browned and cooked through.
- Melt butter in the pan. Add onion along with a couple pinches of salt and pepper, stirring occasionally for 4 minutes.
- Reduce heat to medium and add garlic, Italian seasoning, and tomato paste and cook for 2 minutes, stirring frequently.
- Whisk together beef stock, Worcestershire sauce, brown gravy mix, and onion soup mix until dissolved. Pour beef stock mixture into the large saute pan and bring to a simmer. Reduce heat to medium-low or low and gently simmer for 7-8 minutes, allowing the mixture to thicken slightly.
- Stir in frozen peas and carrots and cook for another 2 minutes. Stir in heavy cream if using. Season to taste with salt and pepper at this point.
- Top with mashed potatoes, spreading them in an even layer to cover the filling completely.
- Bake for 20-25 minutes, or until the mashed potatoes are golden and slightly crispy on top. Broil for 1-2 minutes if desired.
- Let the pie cool for 5 minutes before serving. Garnish with fresh chopped parsley and enjoy!

- For a crispy crust, brush mashed potatoes with melted butter before baking.
- A layer of shredded cheddar cheese would be a delicious addition! The creamy mashed potatoes on top are delicious as well, but a layer of melty cheese would be divine!
