These easy crock pot sloppy joes are loaded with flavor, made with simple ingredients, and perfect for busy weeknights. Just brown the beef, toss everything in the slow cooker, and let it simmer until rich and delicious.

Ingredients

  • 2 tablespoons olive oil, divided
  • 2 pounds ground beef (90/10)
  • 1 small yellow onion, petite diced
  • 1 small green bell pepper, petite diced
  • 6 cloves garlic, finely minced
  • 2 tablespoons tomato paste
  • 8 ounce can tomato sauce
  • 3/4 cup ketchup
  • 1/4 cup brown sugar
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons yellow mustard
  • Kosher salt
  • fresh cracked pepper
  • 8 Brioche hamburger buns for serving

Instructions

  1. Heat 1 tablespoon olive oil in a large saute pan over medium-high heat.
  2. Add ground beef with a couple large pinches of salt and pepper. Brown the beef, crumbling it with a spatula as it cooks, until cooked through. 
  3. While the meat is cooking, add tomato sauce, ketchup, brown sugar, yellow mustard, and a couple large pinches of salt and pepper to the slow cooker and stir until well combined.
  4. Add cooked ground beef to the crock pot
  5. Heat the remaining tablespoon of olive oil to the pan and turn heat to medium. Add yellow onion, green pepper, and a couple large pinches of salt and pepper. Cook, stirring frequently for about 5 minutes.
  6. Add garlic and tomato paste and cook, stirring frequently for about a minute. Pour in the Worcestershire to deglaze the pan and scrape all the yummy bits off the bottom. Transfer to the slow cooker. Stir to combine everything well. 
  7. Cook on high for 2-3 hours or low for 4-5 hours. 
  8. Divide the filling between the Brioche hamburger buns and enjoy!

Notes

  • Brown the beef first for deeper flavor and better texture.
  • Drain some of the grease off if there’s a lot after cooking the beef.
