- 2 tablespoons olive oil, divided
- 2 pounds ground beef (90/10)
- 1 small yellow onion, petite diced
- 1 small green bell pepper, petite diced
- 6 cloves garlic, finely minced
- 2 tablespoons tomato paste
- 8 ounce can tomato sauce
- 3/4 cup ketchup
- 1/4 cup brown sugar
- 3 tablespoons Worcestershire sauce
- 2 tablespoons yellow mustard
- Kosher salt
- fresh cracked pepper
- 8 Brioche hamburger buns for serving
Instructions
- Heat 1 tablespoon olive oil in a large saute pan over medium-high heat.
- Add ground beef with a couple large pinches of salt and pepper. Brown the beef, crumbling it with a spatula as it cooks, until cooked through.
- While the meat is cooking, add tomato sauce, ketchup, brown sugar, yellow mustard, and a couple large pinches of salt and pepper to the slow cooker and stir until well combined.
- Add cooked ground beef to the crock pot.
- Heat the remaining tablespoon of olive oil to the pan and turn heat to medium. Add yellow onion, green pepper, and a couple large pinches of salt and pepper. Cook, stirring frequently for about 5 minutes.
- Add garlic and tomato paste and cook, stirring frequently for about a minute. Pour in the Worcestershire to deglaze the pan and scrape all the yummy bits off the bottom. Transfer to the slow cooker. Stir to combine everything well.
- Cook on high for 2-3 hours or low for 4-5 hours.
- Divide the filling between the Brioche hamburger buns and enjoy!

Notes
- Brown the beef first for deeper flavor and better texture.
- Drain some of the grease off if there’s a lot after cooking the beef.
