French Onion Meatloaf

These mini French onion meatloaves are packed with rich caramelized onions and topped with melty Gruyere cheese for a cozy, flavorful dinner that feels classic but a little elevated. Perfect for an easy weeknight meal!

Ingredients

  • 2 tablespoons butter
  • 2 medium yellow onions, petite diced (about 4 cups)
  • a few splashes dry white wine
  • 1 pound ground beef (90/10)
  • 1 ounce packet onion soup mix
  • 1/3 cup Italian breadcrumbs
  • 1/3 cup half and half
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon Worcestershire sauce
  • Kosher salt
  • fresh cracked pepper
  • 2 ounces shredded Gruyere cheese

Instructions

  1. Melt 2 tablespoons butter in a large saute pan over medium heat. Add diced onion and 1 teaspoon Kosher salt and cook, stirring every 5 minutes or so, for about 35-40 minutes. Deglaze the pan with a few splashes of wine, scraping all the yummy bits off the bottom of the pan. Remove and set aside to a plate to cool.
  2. Add about 2/3 of the cooled caramelized onion, ground beef, onion soup mix, breadcrumbs, half and half, Parmesan, egg, Worcestershire, and a few large pinches of salt and pepper to a large bowl. Mix just until everything is combined. 
  3. Use your hands to gently combine all the ingredients. Divide into 4 equal sections. Form meat mixture into 4 mini meatloaves. 
  4. Place mini loaves on a parchment-lined baking sheet. Bake for 25 minutes.
  5. Divide the remaining caramelized onions between the loaves and top each with shredded cheese.
  6. Bake for another 5-10 minutes or until the meatloaves reach 160 degrees internally. 
  7. Allow meatloaves to rest for a few minutes.
  8. Serve with your favorite air fryer green beans and creamy mashed potatoes. Enjoy!

Notes

  • Take your time caramelizing the onions. This is where a lot of the flavor of the meatloaf comes from.
  • Avoid overmixing the meat mixture to keep the meatloaf tender.
