- 2 tablespoons butter
- 2 medium yellow onions, petite diced (about 4 cups)
- a few splashes dry white wine
- 1 pound ground beef (90/10)
- 1 ounce packet onion soup mix
- 1/3 cup Italian breadcrumbs
- 1/3 cup half and half
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon Worcestershire sauce
- Kosher salt
- fresh cracked pepper
- 2 ounces shredded Gruyere cheese
Instructions
- Melt 2 tablespoons butter in a large saute pan over medium heat. Add diced onion and 1 teaspoon Kosher salt and cook, stirring every 5 minutes or so, for about 35-40 minutes. Deglaze the pan with a few splashes of wine, scraping all the yummy bits off the bottom of the pan. Remove and set aside to a plate to cool.
- Add about 2/3 of the cooled caramelized onion, ground beef, onion soup mix, breadcrumbs, half and half, Parmesan, egg, Worcestershire, and a few large pinches of salt and pepper to a large bowl. Mix just until everything is combined.
- Use your hands to gently combine all the ingredients. Divide into 4 equal sections. Form meat mixture into 4 mini meatloaves.
- Place mini loaves on a parchment-lined baking sheet. Bake for 25 minutes.
- Divide the remaining caramelized onions between the loaves and top each with shredded cheese.
- Bake for another 5-10 minutes or until the meatloaves reach 160 degrees internally.
- Allow meatloaves to rest for a few minutes.
- Serve with your favorite air fryer green beans and creamy mashed potatoes. Enjoy!

- Take your time caramelizing the onions. This is where a lot of the flavor of the meatloaf comes from.
- Avoid overmixing the meat mixture to keep the meatloaf tender.
- Mini loaves cook faster and more evenly than a single large meatloaf, so keep an eye on them to prevent them from overcooking.
