Instructions

  1. Heat one tablespoon of olive oil in a large saute pan over medium heat.
  2. Season all sides of the chicken breast using 2 teaspoons of Italian seasoning, salt, and pepper.
  3. Add chicken to the pan and cook for about 5-6 minutes on each side or until a dark golden brown crust forms and the chicken is cooked through. Set aside.
  4. Add the remaining tablespoon of olive oil without wiping out the pan. Add garlic and the remaining Italian seasoning and a couple pinches of salt and pepper. Cook, frequently stirring for about 30 seconds.
  5. Stir in a few splashes of chicken broth until it cleans the bottom of the pan. Be sure to scrape all the yummy bits off the bottom.
  6. Add sun-dried tomatoes, heavy cream, chicken broth, Parmesan and a couple pinches of salt and pepper.
  7. Cook for a couple minutes over medium-low heat until the cheese is melted, it comes to a gentle simmer, and it thickens slightly. Add white wine vinegar and red pepper flakes. Season to taste with salt and pepper.
  8. Nestle chicken back into the sauce for a couple minutes or until warmed through. Top with fresh basil, serve with pasta, and enjoy!

Notes

  • Slice the chicken into cutlets. Slice each chicken breast horizontally in half so that it creates two thinner pieces of chicken. This will allow the chicken to cook more quickly and evenly. Here’s a video showing exactly how to slice the chicken. Please note in this video, they go a step further and pound out the chicken into thinner pieces for super tender chicken breasts. You are welcome to do this as well but it’s not required.
