These sloppy joe biscuits are a quick, fun twist on a classic comfort food! They’re ready in about 45 minutes and make a perfect weeknight dinner or party appetizer that everyone will love.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup petite diced yellow onion
  • 3/4 cup petite diced green bell pepper
  • 3 cloves garlic, finely minced
  • 1 tablespoon tomato paste
  • 1 pound ground beef (85/15)
  • 8 ounce can tomato sauce
  • 1/3 cup ketchup
  • 2 tablespoons brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 2 (16.3 ounce) cans refrigerated biscuit dough (16 biscuits total)
  • shredded cheddar cheese and thinly sliced green onion for garnish

  • fresh cracked pepper

Instructions

  1. Preheat oven to 375 degrees.
  2. Heat olive oil in a large saute pan over medium-high heat.
  3. Add yellow onion, green pepper, and a couple large pinches of salt and pepper. Cook, stirring frequently for about 5 minutes.
  4. Add garlic and tomato paste and cook, stirring frequently, for about 20 seconds.
  5. Add ground beef. Brown the beef, crumbling it with a spatula as it cooks, until cooked through.
  6. Add tomato sauce, ketchup, brown sugar, Worcestershire sauce, yellow mustard, and a couple large pinches of salt and pepper.
  7. Stir together and cook over medium to medium-low heat for about 8-10 minutes or until the mixture has thickened slightly.
  8. While the meat is simmering, press biscuits into greased muffin tins, forming a cup shape.
  9. Scoop sloppy joe mixture into the biscuit cups. Bake for 15-18 minutes or until the biscuits are cooked through.
  10. Top with cheese and green onion. Serve warm and enjoy!

Notes

    • Don’t overfill the biscuit cups; they need room to puff up as they bake.

    • Add a pinch of red pepper flakes or hot sauce if you want a little heat.

    • Make them mini! Use smaller biscuit dough pieces in mini muffin tins for bite-sized party appetizers.

    • Depending on the size of your muffin tin wells, you may have some leftover sloppy joe mixture. You can use another can of refrigerated biscuits to make more sloppy joe cups, or you can grab some Fritos scoops and use them to shovel the sloppy joe mixture into your mouth while you stand over the pan of warm sloppy joe 😉
