INGREDIENTS
Saute onion, carrot, and celery, then add garlic and spices
Add chickpeas and frozen gnocchi
Add broth and coconut milk
Simmer til gnocchi is cooked, then add Parmesan
Stir in kale and vinegar until wilted
Season to taste with salt and pepper and enjoy!
