Ingredients:
– olive oil – onion – garlic – cumin – chili powder – chiles in adobo – black beans – corn – diced tomatoes – red lentils – V8 – coconut milk – lime juice – salt – pepper
Saute onion garlic and spices in olive oil
Add tomato, corn, chiles, black, bean and lentils
Add coconut milk and tomato juice and simmer
Garnish with sour cream and cilantro and enjoy!
