Ingredients

Allow chuck roast to come to room temp then cover with Dijon 

Completely cover in dry rub

Smoke at 225 for 3 - 4 hours or until internal temp is 160

Wrap in two layers of foil, then cook until internal temp is 200 - 205, about 1 - 2 hours

Place wrapped roast in a cooler to rest for an hour, then slice thinly and serve
