– olive oil – yellow onion – celery – carrot – garlic – walnuts – quinoa – Parmesan – red wine – whole milk – crushed tomatoes – whole canned tomatoes – dried thyme – rosemary – oreagno – salt – pepper
Saute onion, carrot, and celery
Add garlic and herbs
Deglaze with red wine
Add tomatoes
Add quinoa, walnuts, and Parmesan
Simmer with Parmesan rind
