*Easy Vegan Dinner*
Ingredients:
– sesame oil – shredded carrots – sugar snap peas – sliced mushrooms – red curry paste – curry powder – garlic – ginger – vegetable broth – coconut milk – ramen noodles – lime juice – salt – pepper
Saute carrots, peas and mushrooms
Add curry paste, curry powder, garlic, and ginger
Stir in coconut milk
Add veggie broth and simmer
Add ramen noodles and simmer a bit more
Add lime juice and season to taste with salt and pepper
