These BBQ chicken sliders are quick, delicious, and the perfect way to feed a crowd! With just 8 simple ingredients, including shredded rotisserie chicken, your favorite barbecue sauce, and sweet Hawaiian rolls, you can make this cozy dish in under 30 minutes. Great for a game day snack or a simple family dinner!

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup BBQ sauce
  • 12 ounce package King’s Hawaiian rolls
  • 8 ounces shredded cheese (medium cheddar and pepper jack)
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced red onion
  • 2 tablespoons butter
  • 1 tablespoon fresh chopped cilantro

Instructions

  1. Heat oven to 350 degrees.
  2. Slice the Hawaiian rolls in half so you have 2 slabs. Place the bottom slab on a greased or parchment-lined baking sheet. Bake for 5 minutes. 
  3. Combine chicken and BBQ sauce in a large bowl.
  4. Sprinkle the bottom slab with 2/3 of the cheese. Then add BBQ chicken in an even layer along with the onion and pepper. Sprinkle with the remaining 1/3 of the cheese. Top with the other slab of buns.
  5. Melt butter and combine it with the cilantro. Brush it over the top bun.
  6. Bake for 5 minutes, place a piece of foil over top and bake for another 10-15 minutes or until heated through. Slice and enjoy!
