- 2 cups shredded rotisserie chicken
- 1 cup BBQ sauce
- 12 ounce package King's Hawaiian rolls
- 8 ounces shredded cheese (medium cheddar and pepper jack)
- 1/4 cup diced green bell pepper
- 1/4 cup diced red onion
- 2 tablespoons butter
- 1 tablespoon fresh chopped cilantro
Instructions
- Heat oven to 350 degrees.
- Slice the Hawaiian rolls in half so you have 2 slabs. Place the bottom slab on a greased or parchment-lined baking sheet. Bake for 5 minutes.
- Combine chicken and BBQ sauce in a large bowl.
- Sprinkle the bottom slab with 2/3 of the cheese. Then add BBQ chicken in an even layer along with the onion and pepper. Sprinkle with the remaining 1/3 of the cheese. Top with the other slab of buns.
- Melt butter and combine it with the cilantro. Brush it over the top bun.
- Bake for 5 minutes, place a piece of foil over top and bake for another 10-15 minutes or until heated through. Slice and enjoy!
