Mixed Berry Compote

This 4-ingredient berry compote recipe comes together in one saucepan in about 15 minutes. Glossy, jammy, sweet berries perfect for spooning over ice cream or waffles.

Ingredients

  • 2 cups mixed berries (fresh or frozen)
  • 3 tablespoons sugar
  • 2 teaspoons lemon juice
  • 1/2 teaspoon lemon zest

Instructions

  1. COMBINE EVERYTHING. Add berries, sugar, lemon juice, and lemon zest to a medium saucepan.
  2. SIMMER. Cook over medium to medium-low heat for 10-15 minutes, stirring occasionally, until thickened and jammy. It will get thicker as it cools too.
  3. COOL + ENJOY. Let cool for about 10 minutes, then serve with vanilla ice cream or waffles!

Notes

  • Frozen berries work just as well as fresh here (honestly, they release more juice, so the compote gets extra glossy). No need to thaw them first, just toss them in straight from the freezer.
  • Don’t rush the simmer. It looks thin and syrupy at first, but it thickens up fast in the last few minutes, and even more once it’s off the heat, so pull it before it looks “done.”
  • If you prefer a super thick compote, add a cornstarch slurry. Dissolve 1 teaspoon cornstarch in 1–2 teaspoons cold water and stir it in during the last couple of minutes of cooking.
  • You don’t necessarily need to use multiple types of berries for this recipe. You can use all strawberries or all blueberries, and it will be just as delicious. Raspberry compote is one of our family’s favorites! Just make sure it’s 2 cups of whatever fruit you want.
