This easy blueberry compote comes together in 15 minutes with just 4 ingredients, all in one saucepan. Jammy, bright, and oh-so-tasty spooned over ice cream, waffles, or straight from the pot!
COMBINE EVERYTHING. Add berries, sugar, lemon juice, and lemon zest to a medium saucepan.
SIMMER. Stir to combine, then cook over medium-low to medium heat for 10-15 minutes, stirring occasionally.
COOL + ENJOY. Let cool for about 10 minutes, then serve with vanilla ice cream or waffles!

Notes
This compote will thicken as it cools. If it looks perfect in the pan, it may be too thick by the time it cools. Pull it when it still seems slightly loose and saucy.
The sauce should be simmering gently throughout the cooking process. If it’s simmering too vigorously, turn the heat down to medium-low or low. A gentle simmer helps thicken the compote without breaking the berries down too much.
Blueberries hold their shape more than strawberries, so for a saucier consistency, mash some of the berries with the back of a spoon as they cook.
For extra lemon flavor, try adding an extra 1/2 teaspoon of lemon zest. It brightens up the blueberries nicely.
A splash of vanilla extract (about 1/2 teaspoon) stirred in at the end is a great add-in for depth of flavor.
