These easy Buffalo chicken sliders are spicy, cheesy, and perfect for game day or a quick weeknight dinner. Made with rotisserie chicken and baked on soft Hawaiian rolls – they come together in 30 minutes or less!

Ingredients

  • 12 ounce package King's Hawaiian rolls
  • 3 cups shredded rotisserie chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 8 ounces shredded pepper jack cheese
  • 2 tablespoons butter, melted
  • 1 tablespoon fresh chopped cilantro

Instructions

  1. Heat oven to 350 degrees.
  2. Slice the Hawaiian rolls in half so you have 2 slabs. Place the bottom slab on a greased or parchment-lined baking sheet. Bake for 5 minutes.
  3. Combine chicken, buffalo sauce, and ranch dressing in a large bowl.
  4. Sprinkle the bottom slab with 2/3 of the cheese. Then add buffalo chicken in an even layer. Sprinkle with the remaining 1/3 of the cheese. Top with the other slab of buns.
  5. Melt butter and combine it with the cilantro. Brush it over the top bun.
  6. Bake for 5 minutes, place a piece of foil over top and bake for another 10-15 minutes or until heated through. Slice and enjoy!

Notes

    • Toasting the bottom buns helps prevent sogginess from the sauce and chicken.

    • For extra crispy tops, broil for 1–2 minutes at the end (watch closely!).

    • Easily double the recipe for a larger crowd using a 9×13 baking dish.
