This simple chicken Parmesan sandwich recipe could not be easier to make! Crispy Parmesan chicken, melty mozzarella, and tangy marinara sauce are nestled in a toasty garlic buttered hoagie bun for the ultimate cozy comfort food!

For the Chicken:

  • 1 pound (2 breasts) boneless, skinless chicken breasts, cut into 4 cutlets
  • 1/4 cup mayonnaise
  • 1.5 teaspoons Italian seasoning, divided
  • 1.5 teaspoons garlic powder, divided
  • 1/2 cup finely grated Parmesan cheese
  • 1/2 cup Panko breadcrumbs
  • Kosher salt
  • freshly cracked pepper
  • 1 tablespoon olive oil + more as needed
  • 1 tablespoon unsalted butter + more as needed

For the Sandwiches:

  • 4 hoagie rolls
  • 4 tablespoons butter, room temperature
  • 1 tablespoon fresh chopped parsley
  • 2 cloves garlic, finely minced
  • 1 cup marinara sauce
  • 8 ounces sliced fresh mozzarella cheese
  • 2 tablespoons fresh chopped basil

Instructions

  1. Slice 2 chicken breasts in half lengthwise, creating 4 thinner pieces of chicken. You can also pound out the chicken breasts to make them a uniform thickness.
  2. In a shallow bowl, combine 1/4 cup mayo with 1/2 teaspoon Italian seasoning, 1/2 teaspoon garlic powder, and a couple pinches of salt and pepper.
  3. In another shallow bowl combine 1/2 cup finely grated Parmesan cheese, 1/2 cup Panko breadcrumbs, 1 teaspoon Italian seasoning, 1 teaspoon garlic powder, and a couple large pinches of salt and pepper.
  4. Toss chicken in the mayonnaise mixture until evenly coated on all sides.
  5. Dredge chicken in the Parmesan/breadcrumb mixture, gently pressing it into the chicken.
  6. Heat a large saute pan over medium heat. Add 1 tablespoon olive oil and 1 tablespoon butter. Once the butter has melted and the oil is shimmering, add chicken.
  7. Cook each side for 3-5 minutes or until a dark golden brown crust forms on each side and the chicken is cooked through in the center. You may need to cook the chicken in batches depending on the size of your pan. Add more oil and butter as needed during the cooking process if the pan gets too dry.
  8. Place chicken on a cooling rack on top of a baking sheet. Top with sliced mozzarella cheese. Broil for 2-3 minutes or until the cheese is melted and starts to turn dark golden brown on top.
  9. While the chicken is cooking, slice hoagie buns in half. Combine butter, parsley, garlic, and a couple pinches of salt and pepper until smooth. Spread garlic butter mixture across the cut sides of each hoagie. Broil hoagie buns, cut side up, for 1-2 minutes or until toasty.
  10. Warm marinara sauce in the microwave. Assemble sandwiches by filling each hoagie with a piece of chicken, top with marinara sauce, and garnish with fresh basil. Enjoy!

Equipment

Notes

    • Slice the chicken evenly so it’s the same thickness throughout the breast. You can also pound out the thicker parts of the chicken so that it’s an even thickness throughout. This will ensure that it cooks quickly and evenly.
    • Go light on the marinara sauce and serve extra on the side! There is nothing worse than a soggy sandwich so I like to add a dollop of marinara on top of the melted cheese so it doesn’t get the chicken breast soggy and then serve more on the side for dipping.
    • If you can’t find hoagie buns, try ciabatta bread instead. You want something with a sturdy crust that’s tender inside.
    • Provolone is a great substitute if you can’t find fresh mozzarella.
