  • 1 lb. flank/skirt/bottom round steak
  • 2/3 cup soy sauce
  • 1/3 cup olive oil
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 4 cloves garlic, finely minced
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon Kosher salt
  • 2 cups taco seasoning French fries
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • 4 burrito size flour tortillas

Instructions

  1. Add soy sauce, olive oil, cilantro, lime juice, garlic, salt, and pepper to a shallow dish.
  2. Add steak and toss to coat. Cover and refrigerate for 1-2 hours and up to 12 hours.
  3. Cook fries according to package directions and season with homemade taco seasoning.
  4. Heat a large cast iron griddle (or grill) over medium-high heat.
  5. Transfer marinated steak slices from the marinade to the skillet or grill. Sear meat for a minute or so on each side. Cook to the desired doneness. Let rest for 5 minutes, then thinly slice against the grain.
  6. Assemble each burrito by grabbing a flour tortilla and adding 1/4 of the steak, 1/4 of the shredded cheese, 1/4 of the fries, a couple tablespoons of sour cream, and guacamole.
  7. Roll into a burrito. Repeat with remaining ingredients until all 4 burritos are rolled. Slice in half and enjoy!

Notes

  • Don't marinate the steak for too long or the marinade will start to break down the fibers of the steak and give it a mushy texture. 1-2 hours is perfect and overnight is just fine as well.
  • Don't overcook the steak. I like to cook the steak to medium or 140-145 degrees. And be sure to let it rest for about 5 minutes before slicing.
  • Cut the steak against the grain into thin slices. This will give you a super tender steak.
  • Keep the party going with more toppings! Though these California burritos are already bursting with amazing toppings, you can also add things like tomatoes, jalapenos, salsa verde, hot sauce, red onions, homemade salsa, Pico de Gallo, or even refried beans. Get creative with it!
