- 14-ounce Italian loaf
- 8 ounce cream cheese, room temperature
- 8 ounces sour cream
- 8 ounces Colby jack cheese, shredded
- 4 ounces sharp cheddar cheese, shredded
- 8 slices bacon, crispy and crumbled
- 3/4 cup chopped pickled jalapenos
- 1/2 cup petite diced fresh jalapenos, ribs and seeds removed
- 1/3 cup thinly sliced green onion + more for garnish
- 2 tablespoons sliced chives
- 2 cloves finely minced garlic
- 1/2 teaspoon onion powder
- a couple pinches of cayenne pepper
- Kosher salt

Instructions
- Heat oven to 350 degrees. Slice Italian loaf in half lengthwise and place on a baking sheet, cut side up.
- Add cream cheese, sour cream, half the Colby jack cheese, all the sharp cheddar cheese, bacon (reserve some for garnish), pickled jalapenos, fresh jalapenos, green onions, chives, garlic, and a couple large pinches of salt and pepper to a large bowl. Mix until well combined.
- Spread the jalapeno mixture in an even layer across the cut side of each piece of bread. Top with remaining shredded cheese. Add a few slices of fresh jalapeno if you like.
- Bake for 25-30 minutes or until the cheese on top is melted and starting to turn golden brown. Broil for 1-2 minutes if desired.
- Let sit for about 5 minutes to cool. Slice and garnish with bacon, green onions, and chives. Enjoy!

- Adjust the Heat Level: As written, this recipe is pretty mild in the spice department. If you want it spicy, leave some of the ribs and seeds in the fresh jalapenos. Add a couple more pinches of cayenne pepper for an extra kick too!
