Air Fryer Potato Wedges

These potato wedges take just 20 minutes in the air fryer and come out perfectly crispy on the outside and tender on the inside. They're loaded with flavor from a simple mixture of dried herbs and spices and are totally customizable depending on the flavors your family enjoys!

Instructions

  1. Wash and dry potatoes.
  2. Cut potatoes into wedges by slicing the potatoes in half, then placing the cut side down on the cutting board and cutting it in half again. Cut each potato quarter in half again. This will give you 32 potato wedges total.
  3. Soak potatoes in a large bowl of cold water for 15 minutes.
  4. Drain and thoroughly dry potatoes with a clean kitchen towel.
  5. Add wedges to a large bowl. Drizzle with olive oil and sprinkle with Lawry's and Italian seasoning. Toss to coat evenly.
  6. Place potatoes in the air fryer basket or tray, cut side up, and air fry at 400 degrees for 20-22 minutes, giving them a flip/shake about halfway through.
  7. Season with salt and pepper. Garnish with parsley if desired and enjoy!

Notes

  • Find potatoes that are uniform in size. You may need to cook the potato wedges more or less depending on the size of the potato. Using 4 of the same size potatoes will ensure that each wedge cooks through evenly at the same time.
  • Soak the potato wedges! Soaking potato wedges draws out some of the starch which results in a crispier fry, so don’t skip this step. 
  • The cook time is really an estimate and will vary depending on what type of air fryer you have. The cook time I've listed is based on using an Instant Vortex air fryer.
