    These potato wedges take just 20 minutes in the air fryer and come out perfectly crispy on the outside and tender on the inside. They're loaded with flavor from a simple mixture of dried herbs and spices and are totally customizable depending on the flavors your family enjoys!

    You Will Love This

    • This is the easiest way to make a simple side dish! We like to serve these crispy potato wedges alongside our favorite burger recipes because they are so quick and easy! No need to preheat the stove - simply cut, soak, toss in your favorite spices, and air fry!

    Ingredients and Substitutions

    • Russet Potatoes - Russet potatoes are the best potato for these air fryer wedges. Russets have a quick cook time, great flavor and texture, and get a nice crispy skin. You could also Yukon gold potatoes, although they likely won't get quite as crispy.
    • Olive Oil - This is our family's favorite brand of olive oil. You can also use avocado oil, grapeseed oil, or canola oil.
    • Lawry’s Seasoned Salt - We love, love, love Lawry’s in our house. It’s so versatile and includes a wide range of spices for that delicious signature flavor. If you can’t find Lawry’s, you can make your own, use your favorite fry seasoning, or just sprinkle on some garlic powder and paprika.
    • Italian Seasoning - I like to add Italian seasoning to my wedges for another layer of flavor. You could also used dried thyme, dried oregano, or dried rosemary as well.
    • Parsley - Fresh chopped parsley adds a delicious herby pop to these wedges. You could use fresh dill, fresh cilantro, or fresh basil instead.

    Instructions

    Wash and dry potatoes. Cut potatoes into wedges by slicing the potatoes in half, then placing the cut side down on the cutting board and cutting it in half again. Cut each potato quarter in half. This will give you 32 potato wedges total. Soak potatoes for 15 minutes.

    Drain and thoroughly dry potatoes with a clean kitchen towel. Add wedges to a large bowl. Drizzle with olive oil.

    Sprinkle with Lawry's and Italian seasoning. Toss to coat evenly.

    Place potatoes in the air fryer basket or tray, cut side up.

    Air fry at 400 degrees for 20-22 minutes, giving them a flip/shake about halfway through.

    Season with salt and pepper. Garnish with fresh parsley if desired and enjoy with ketchup!

    Tips

    • Find potatoes that are uniform in size. You may need to cook the potato wedges more or less depending on the size of the potato. Using 4 of the same size potatoes will ensure that each wedge cooks through evenly at the same time.
    • Soak the potato wedges! Soaking potato wedges draws out some of the starch which results in a crispier fry, so don’t skip this step. 
    • The cook time is really an estimate and will vary depending on what type of air fryer you have. The cook time I've listed is based on using an Instant Vortex air fryer.

    Why do you soak potatoes in water before air frying?

  • Soaking potato wedges before air frying them draws out some of the starch which allows the potatoes to get crispy. While it is another (easy) step in the process, it is really worth the extra time!
  • Can you cook fresh potato wedges in an air fryer?

  • Yes! These potato wedges go into the air fryer raw and cook up beautifully. No need to boil or blanch them before air frying.
  • How long should you soak potatoes before air frying?

    Soak your potato wedges for about 15 minutes before air frying. This draws out the starch so the potato wedges can get deliciously crispy on the outside!

    How long does it take to cook potatoes in an air fryer?

    These potato wedges take about 20 minutes or so in the air fryer which makes them a super simple side dish for a busy weeknight!

    Make-Ahead, Storage, and Reheating

    • Make-Ahead: If you want to slice these potatoes wedges ahead of time, you can soak them in a bowl of water in the fridge for a few hours or even overnight. When you're ready to air fry them, just follow the recipe instructions below.
    • Storage: Store leftover cooked potato wedges in an airtight container in the refrigerator for up to a week. 
    • Reheating: Reheat potato wedges in the air fryer at 350 degrees until warmed through. You could also bake them in a sheet pan in a 400 degree oven until heated through.
