Ingredients and Substitutions
- Flaked Roasted Salmon – My go-to for salmon is wild-caught sockeye salmon from ButcherBox. You can use leftover roasted salmon or use my easy Roasted Greek Salmon for this burger recipe. This recipe is designed to be made with cooked salmon that’s flaked into 1-inch pieces as opposed to fresh salmon. You can roast skinless salmon fillets if you can find them, or just remove the skin after the salmon has roasted.
- Panko Breadcrumbs – Panko helps hold everything together. You can also use Italian seasoned or regular breadcrumbs if you don’t have Panko on hand.Â
- Eggs – Egg acts as a binder to help ensure the salmon patty doesn’t fall apart in the pan or on the grill.
- Lemon Zest – Lemon pairs perfectly with salmon, and using the zest is my favorite way to infuse that fresh citrus flavor into these salmon burgers.
- Mayonnaise – Mayonnaise adds delicious layer of flavor and the perfect texture to these salmon burgers. It also helps hold everything together for the expertly formed patty.
- Dijon Mustard – Dijon mustard adds just the right amount of tang and an earthy flavor which compliments salmon perfectly. If you’re a big fan of it’s flavor, free to add a whole tablespoon Dijon mustard.
- Fresh Herbs – Fresh chives and parsley are the two herbs I love to use for this salmon burger recipe. Feel free to substitute with fresh dill as well.
Instructions
Add salmon, Panko, egg, lemon zest, mayo, Dijon, chives, and parsley along with a couple large pinches of Kosher salt and black pepper to a medium-sized bowl.
Stir everything together, mixing just until well combined. Don’t overmix.
Divide salmon mixture evenly into 4 parts. Form salmon mixture into 4 patties that are about 1-inch thick.
Grease a cast iron griddle, large skillet, or grill grates with olive oil and heat over medium-high heat. Add burger patties and cook each side for about 3-5 minutes per side or until a dark golden-brown crust forms on the patties and they are cooked through.
Serve salmon burgers on a Brioche bun – I like to toast the top bun and bottom bun sliced side down on the griddle – with my infamous Dill Yogurt Sauce, lettuce, red onion, cucumber, dill, and capers. Enjoy!

- Don’t overmix the salmon mixture. If you overmix it the salmon will break down into small pieces and the burgers will become dense. Mixing just until the ingredients are combined is the best way to ensure you’ll end up with a tender salmon burger with large chunks of salmon throughout.
- Don’t skip the Dill Yogurt Sauce! These salmon burgers lend themselves to a wide variety of toppings but my Dill Yogurt Sauce is the very best! It only takes 5 ingredients and just minutes to throw together!

Could you use canned salmon instead?
Canned salmon will work instead of roasted salmon. The flavor will be slightly different though. Great question, David!
