This hearty one-pot wonder combines hearty ground beef with crisp sauteed cabbage all tossed in a tangy, salty sauce made with soy sauce, rice vinegar, and sesame oil. Finish with sliced green onion, toasted sesame seeds, and crispy wonton strips for a delicious meal your whole family will love!

Ingredients to Make an Egg Roll in a Bowl

  • Soy Sauce: Use low-sodium soy sauce if you prefer. You can also substitute with coconut aminos.
  • Seasoned Rice Vinegar: Seasoned rice vinegar is rice vinegar with added sugar and salt. You can find it in most grocery stores in the Asian section.
  • Brown Sugar: Light brown sugar is best, but dark will also work.
  • Garlic & Ginger: I like to use garlic paste and ginger paste for this recipe because it saves on prep time. You can also use freshly minced or grated garlic and ginger. Substitute with 3/4 of a teaspoon of garlic powder and 1/4 teaspoon of ground ginger if you don’t have fresh on hand.
  • Toasted Sesame Oil: Regular sesame oil will work if you can’t find toasted sesame oil but toasted has SO much more flavor, it’s worth an extra look. Peanut oil would work as a substitute but will change the flavor.
  • Ground Beef: I typically use an 85/15 or 80/20 lean ground beef. Remember, fat equals flavor, so don’t be afraid of it! You can substitute beef with ground turkey, ground chicken, or ground pork.
  • Yellow Onion: Yellow or white onion will work for this recipe.
  • Carrots: Use matchstick carrots from the grocery store to save on prep time.
  • Green Onion: Green onions are my favorite way to add fresh flavor to this egg roll bowl. You could substitute with fresh chopped cilantro for an herby element.
  • Bagged Cabbage “Coleslaw Mix”: If you can’t find coleslaw mix at the grocery store, you can thinly slice cabbage yourself.

How to Make Egg Roll in a Bowl

Whisk together soy sauce, rice vinegar, brown sugar, garlic, sesame oil, and a couple large pinches of salt and pepper.

Cook ground beef in toasted sesame oil until browned. Add onion and carrots and cook for 4 minutes.

  • Don’t overcook the cabbage! Only saute the cabbage for a couple minutes until it wilts. If you cook it too much it will get very soft and there will be less of a textural variety in the dish. It’s best if the cabbage still has a slight bit of crunch.
  • Get creative! Feel free to switch up the ingredients to suit your family’s taste. Add water chestnuts, mushrooms, or bean sprouts!
  • Add some spice! Stir in a pinch or two of crushed red peppers to add some heat to this dish.

  • 1 small yellow onion, diced
  • 1 cup matchstick carrots

Instructions

  1. Whisk together 1/2 cup soy sauce, 3 tablespoons seasoned rice vinegar, 1 tablespoon brown sugar, 2 grated garlic, 2 teaspoons sesame oil, and a couple large pinches of salt and pepper.
  2. Add 1 tablespoon toasted sesame oil to a large saute pan over medium-high heat. Add 1 pound ground beef and a couple pinches of salt and pepper. Brown the beef, crumbling with a spatula, until cooked through.
  3. Reduce heat to medium and add 1 small diced onion and 1 cup of matchstick carrots along with a couple pinches of salt and pepper and cook for 4 minutes, stirring frequently.
  4. Add 1 tablespoon grated garlic, 1 tablespoon grated ginger, 3 thinly sliced green onions, and a pinch of salt and pepper. Cook for 1 minute, stirring frequently.
  5. Add 16 ounces coleslaw mix along with a couple pinches of salt and pepper. Cook for about 2 minutes or until the cabbage begins to wilt.
  6. Stir sauce into the meat and veggie mixture and cook for about 2 minutes, stirring frequently. Season to taste with salt and pepper.
  7. Serve with brown rice and garnish with wonton strips, green onion, and toasted sesame seeds. Enjoy!
