  • Whole Milk: Moistens the breadcrumbs and adds richness. Use any kind of milk or half and half.
  • Yellow Onion: Adds sweetness and flavor. Shallots or white onions can be substituted.
  • Garlic: Enhances the savory taste. Garlic powder works if fresh garlic isn’t available.
  • Italian Seasoning: Infuses a blend of herbs. Substitute with dried oregano and dried basil.
  • Garlic Powder: Boosts the flavor of the fresh garlic.
  • Onion Powder: Boost the flavor of the fresh onion. Dried minced onion could be used as well.

How To Make Salisbury Steak

Combine Everything: Add onion, garlic, Italian seasoning, garlic powder, onion powder, egg yolk, ketchup, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix well. Add ground beef and mix gently until combined.

Form The Patties: Divide the mixture into six equal portions. Shape each into an oval disc.

Sear The Patties: Heat olive oil in a large sauté pan over medium-high heat. Cook the patties for 2-3 minutes per side until browned. Set aside.

Salisbury Steak

Mushroom Gravy

  • 3 tablespoons butter
  • 1 small yellow onion, petite diced
  • 8 ounces sliced mushrooms
  • 3 cloves garlic, grated
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 3 tablespoons all-purpose flour
  • 1.5 cups beef stock
  • 2 teaspoons Worcestershire sauce
  • Kosher salt
  • fresh cracked pepper

Instructions

  1. Add 1/4 cup breadcrumbs to a large bowl. Pour 1/4 cup heavy cream over the breadcrumbs and stir to combine well.
  2. Add 1/4 cup grated yellow onion, 3 cloves grated garlic, 1 teaspoon Italian seasoning, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1 egg yolk, 2 tablespoons ketchup, 2 teaspoons Dijon mustard, 2 teaspoons Worcestershire sauce, and a few large pinches of salt and pepper. Use your hands to mix thoroughly until the mixture is well combined and has an even texture throughout. 
  3. Add ground beef and use your hands to mix until just combined. 
  4. Heat 1 tablespoon olive oil in a large saute pan over medium-high heat.
  5. Separate the meat mixture into 6 equal balls. Carefully form each ball into an oval disc.
  6. Add hamburger steaks to the oil in the pan and cook on each side for 2-3 minutes. It’s okay if they’re not quite cooked through. Set aside.
  7. Add 3 tablespoons butter to the pan without wiping it out. Turn heat down to medium. 
  8. Add 1 petite diced onion along with a couple pinches of salt and pepper. Cook, stirring frequently for about 4 minutes. Try to gently scrape the yummy brown bits off the bottom of the pan as you stir the onions every minute or so.
  9. Add mushrooms, 1 teaspoon onion powder, 1/2 teaspoon garlic powder, and cook for 4 minutes, stirring occasionally. 
  10. Stir in 3 tablespoons flour and cook, stirring frequently, for about a minute.
  11. Carefully whisk in about a 1/2 cup of beef broth until it cleans the bottom of the pan. Be sure to scrape all the yummy bits off the bottom of the pan.
  12. Whisk in remaining beef broth and 2 teaspoons Worcestershire sauce. Add a couple pinches of salt and pepper. Whisk until smooth and creamy.
  13. Bring to a simmer over medium heat. Return the steaks to the pan along with any juices, reduce heat to low, and simmer for 3-4 minutes or until the sauce thickens and coats the back of a spoon and the steaks are cooked through. Season to taste with salt and pepper.
  14.  Garnish with fresh chopped parsley and serve over mashed potatoes!
