Ingredients for Steak Bites
- Steak: Sirloin or ribeye works best for a tender and flavorful bite. Strip steak is another great option.
- Olive Oil: Helps sear the steak to perfection. Avocado oil is a great substitute.
- Butter: Creates a rich, buttery garlic sauce. Salted or unsalted will work.
- Garlic: Infuses the butter sauce with bold flavor. Fresh is best, but garlic powder will work in a pinch.
- Smoked Paprika: Adds a mild smoky depth to the steak. Regular paprika works too but it won’t have that same smoky flavor.
- Onion Powder: Enhances the savory flavors.
- Fresh Parsley: Adds a fresh pop of color and brightness. Optional but recommended!
How to Make Steak Bites
Prep the Steak: Pat steak pieces dry with a paper towel for the best sear. Season with smoked paprika, onion powder, salt, and pepper.
Sear the Steak: Heat 1 tablespoon olive oil in a large pan over medium-high heat. Add half the steak in a single layer and sear for 2-3 minutes per side. Repeat with remaining steak bites and olive oil, then set aside.
Make the Garlic Butter Sauce: Reduce heat to medium-low and add butter and garlic to the pan. Stir and cook for 2 minutes, scraping up the browned bits.
Toss and Serve: Return steak bites to the pan and toss in the garlic butter sauce.

Ingredients
- 1.5 pounds steak (sirloin or ribeye), cut into bite-sized pieces
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 2 tablespoons olive oil, divided
- 6 tablespoons butter
- 4 garlic cloves, minced
- 2 tablespoons fresh chopped parsley for garnish
- Kosher salt

Instructions
- Pat the steak pieces dry with paper towel to ensure a good sear. Season on all sides with smoked paprika, onion powder, and a few large pinches of salt and pepper.
- Heat 1 tablespoon olive oil in a large saute pan or large cast iron skillet over medium-high heat.
- Add half the steak pieces in a single layer to the hot pan. Sear for 2-3 minutes per side or until a dark golden brown crust forms and the steak is cooked to your desired doneness. Remove steak bites from the pan and set aside. Cook the remaining steak bites in the same fashion using the remaining tablespoon of olive oil and then set aside.
- Without wiping out the pan, reduce heat to medium-low or low. Add butter and minced garlic to the skillet. Cook for about 2 minutes, stirring frequently, scraping up any browned bits off the bottom of the pan. Don’t let the garlic burn or get brown!
- Return the steak bites and any juices to the pan and toss them in the garlic butter sauce to coat.
- Sprinkle with fresh parsley and serve immediately.

Kylie, I am searching recipes for an hors d’oeuvres using great steak bites and this is it. Although serving fresh is best, I wonder if these can work as an item at a cocktail party, a quick reheat and toothpicks for a bite sized treat. I am thinking filet mignone and a one bite piece. My hesitation is the butter, maybe it coagulates so all oil might be better. Any of your insight would be appreciated. Thank you for a terrific website, I use it often.
Great question, Den! I wonder if it might be best to prep what you can before guests arrive and then just cook the meat just minutes before guests arrive or just as they’re arriving?
I think I can make that work. I have to give it a try. I can easily have it all prepped and maybe browned very rare and ready to finish off just to reheat without drying out. Even it it ultimately comes to room temp, filet even tastes good directly from the fridge!
