Rotisserie chicken, tangy BBQ sauce, and melty cheese are layered on fluffy Hawaiian rolls, then brushed with buttery cilantro topping for a flavorful, easy meal that everyone will love.

Ingredients for BBQ Chicken Sliders

  • Rotisserie Chicken: You can use any cooked chicken for this recipe. I love the ease and deliciousness of rotisserie chicken but leftover baked chicken or grilled chicken thighs would work too!
  • BBQ Sauce: Use your family’s favorite barbecue sauce for these sliders or make your own at home!
  • King’s Hawaiian Rolls: There is nothing quite like a sweet Hawaiian roll. It’s pillowy soft on the inside but sturdy enough to hold all the delicious BBQ chicken and cheese! Any slider bun will work though!
  • Cheese: Shred your own cheese so it melts easily and gets super ooey gooey. I like to use a combination of pepper jack and medium cheddar. Use your favorite melty cheese.
  • Bell Pepper & Onion: Fresh pepper and onion add the perfect amount of crunch and fresh flavor! Pickled onions are another family favorite!
  • Topping: I like to brush the top of the slider buns with melted butter mixed with fresh chopped cilantro. It adds rich, buttery flavor with a pop of brightness from the cilantro. You can skip it if you like or use parsley instead.

How to Make BBQ Chicken Sliders

Prep the Rolls: Heat oven to 350°F. Slice Hawaiian rolls in half horizontally to create two slabs. Place the bottom slab on a greased or parchment-lined baking sheet and bake for 5 minutes.

Prepare the Chicken: In a large bowl, combine shredded chicken with BBQ sauce until well coated.

Assemble the Sliders: Sprinkle 2/3 of the shredded cheese evenly over the bottom slab of rolls.

Instructions

  6. Bake for 5 minutes, place a piece of foil over top and bake for another 10-15 minutes or until heated through. Slice and enjoy!
