The Easiest Oven Braised Beef Chuck Roast

This easy braised beef chuck roast recipe is a comforting classic that’s simple to prepare but packed with rich flavor! Easy Beef Chuck Roast Recipe

It requires minimal prep, with just a couple simple steps – searing the meat and sautéing the veggies – then the oven does the rest. The slow-cooking process is hands-off, perfect for busy days when you want a hearty meal without the hassle!

Ingredients for Beef Chuck Roast Recipe

  • beef chuck roast
  • mirepoix (onion, carrot, celery)
  • garlic
  • Italian seasoning
  • brown sugar
  • tomato paste
  • Worcestershire sauce
  • beef stock
  • bay leaves

How to Make Braised Chuck Roast at Home

Heat oven to 325 degrees. Heat oil in a 5 quart braising pan or a large saute pan over medium-high heat. Pat chuck roast dry and season with salt and pepper on all sides. Sear chuck roast until a dark golden-brown crust forms. Remove from pan and set aside.

Without wiping out the pan, add onion, carrot, celery, and a large pinch of salt and pepper to the pan. Cook, stirring occasionally, for 6 minutes. Reduce heat to medium and add smashed garlic, Italian seasoning, tomato paste, brown sugar, and Worcestershire sauce along with a couple pinches of salt and pepper. Cook for 2 minutes, stirring frequently.

Move veggies to the outside of the pan and add seared beef chuck roast along with any juices that accumulated on the plate, beef stock, bay leaves, and another couple of large pinches of salt and pepper.

Cover and place in the oven to cook for about 3 hours or until it’s fall apart tender and shreds easily. This is a great time to make those mashed potatoes or mac and cheese.

Let the roast rest for about 10 minutes. Serve chuck roast on top of my super easy garlic mashed potatoes and garnish with fresh parsley. Enjoy!

Tips for Making Beef Chuck Roast

  • Don’t skip the sear! Before braising, sear the chuck roast on all sides in a hot pan. This step helps to lock in the juices and adds depth of flavor to the dish. Don’t forget to season the roast well with salt and pepper before searing!
  • Let it rest! Give the roast about 10 minutes to rest before shredding and serving. This will allow the juices to redistribute and ensure that the roast is tender and juicy.

  • It stays fresh in the fridge all week and reheats beautifully.
  • I like to start it on Sunday morning so I’ve got enough for a delicious Sunday dinner and then a couple easy lunches or dinners to heat up throughout the week!

Storing Leftover Chuck Roast

Store leftover roast in an airtight container in the fridge for up to a week.

Freezing Chuck Roast

  • Store shredded beef in the cooking liquid in an airtight, freezer-safe container.
  • Freeze for up to 3 months.
  • Thaw overnight in the fridge before reheating.

Reheating Beef Roast

  • Reheat roast in a covered Dutch oven or baking dish in a 325-degree oven for 20 minutes or until warmed through.
  • Season to taste with salt and pepper before serving.

  1. The only thing I did different was add a fresh sprig of rosemary And about 2 cups of water with beef cubes since I didn’t have any broth. This was the first dish I was able to cook without my husband having to doctor it up.😅






  2. Excellent recipe!!!! I deglazed with ~1 cup red wine and some extra carrots but otherwise followed pretty closely. Absolutely amazing for my first time braising a roast. Thank you!!
