  • Croissants: Use large bakery croissants for the best texture and buttery flavor. Day-old croissants work perfectly. Substitute with brioche or challah if needed.
  • Deli Ham: Adds savory, salty flavor. Use any sliced ham you like โ€” honey, smoked, or black forest. Turkey or prosciutto also work.
  • Gruyere Cheese: Melts beautifully and adds a nutty, rich flavor. Swiss, cheddar, or mozzarella can be used instead.
  • Eggs: Form the base of the custard that holds everything together. Large eggs are ideal.
  • Half and Half: Makes the casserole creamy and tender. You can substitute with whole milk or a mix of milk and cream.
  • Dijon Mustard: Adds depth and a subtle tang that complements the ham and cheese. Use stone-ground mustard or spicy brown mustard instead, if you prefer.

How to Make Ham and Cheese Croissant Bake

Make the Custard: In a large bowl, whisk together eggs, half and half, Dijon mustard, garlic powder, onion powder, rubbed sage, dried thyme, salt, and pepper.

Soak the Croissants: Submerge croissant halves in the custard mixture and let soak for 10โ€“15 minutes, if time allows.

Create the Base: Arrange in the prepared baking dish, overlapping as needed.

Assemble the Bake: Tuck pieces of ham and shredded cheese between the croissant layers, filling any gaps evenly.

Bake: Cover the dish with foil and bake for 40 minutes. Remove the foil and bake for another 15โ€“20 minutes, until golden brown and the custard is just set.

  • 8 ounces shredded Gruyere cheese
  • 8 large eggs
  • 2 cups half and half
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon rubbed sage
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon fresh cracked black pepper
  • sliced chives for garnish

Instructions

  1. Halve each croissant and place on a sheet pan in a single layer. Let them sit out on the counter overnight. —–include oven instructions
  2. Heat oven to 350 degrees and grease a 9×13 white baking dish with butter.
  3. In a large bowl, whisk together eggs, half and half, Dijon, garlic powder, onion powder, rubbed sage, dried thyme, salt, and pepper.
  4. Submerge croissants in the custard mixture and soak for 10-15 minutes if you have time. Arrange croissant pieces in the greased white 9×13 baking dish in an even layer, overlapping slightly.ย 
  5. Fill in the little pockets with shredded cheese and rolled/folded ham slices.ย ย 
  6. Cover with foil and bake for 40 minutes. Remove foil and bake for another 15-20 minutes or until the top of the casserole is golden brown and the egg custard is just set.ย 
  7. Let rest for 10 minutes, then garnish with chives. Slice, serve, and enjoy!
