Easy Grilled Chicken Sandwich Recipe

The marinade is simple – Dijon mustard, a few key spices, olive oil, and dill pickle juice. Don’t be scared off by the dill pickle juice! I promise it’s amazing and adds the most delicious briny flavor but it’s not overpowering!
- It’s a fun alternative to traditional grilled burgers and hot dogs. We all reach that point in the summer where we want to make an easy dinner on the grill but we don’t want boring burgers again. This chicken sandwich recipe is an unexpected family favorite and definitely something to get you out of that burger rut!
Ingredients for a Grilled Chicken Sandwich
- Chicken Breasts: Boneless, skinless chicken breasts are your best option for this grilled chicken sandwich. If your breasts are large, slice them in half lengthwise to create two thinner pieces.
- Olive Oil: Olive oil is the perfect base for this marinade. It adds flavor while preventing the chicken from sticking to the grill or grill pan.
- Dill Pickle Juice: A surprising but delicious ingredient in this marinade. Don’t skip the pickle juice! It adds tons of flavor but I promise the chicken doesn’t taste like pickles!!
- Dijon Mustard: Dijon mustard adds a delicious depth of flavor. You can use stone ground mustard or spicy brown mustard in its place if you like.
- Spices: Garlic powder, onion powder, and paprika combine with the other marinade ingredients to add tons of flavor.
- Honey Mustard Dressing: While the sauce possibilities are endless with this grilled chicken sandwich, my favorite pairing is my homemade honey mustard dressing!
- Buns, Lettuce, Tomato, Red Onion, Pickles: Serve these grilled chicken patties with your favorites. I like to keep it simple but include plenty of crispy veggies and a sturdy bun to balance out the grilled chicken breast.
How to Make Grilled Chicken Sandwiches at Home
Combine olive oil, pickle juice, Dijon mustard, garlic powder, onion powder, and paprika, along with a couple pinches of salt and pepper in a shallow dish. Add chicken and marinate for about 30 minutes.
Preheat the grill or grill pan on high heat. Reduce heat to medium-low and oil the grill grates. Add chicken and cook for 3-5 minutes per side or until the chicken has beautiful grill marks on the outside and is cooked through on the inside.
Toast buns on the grill, sliced side down, for about 30 seconds. Assemble sandwiches by spreading honey Dijon or mayo on the bottom. Then add a leaf of lettuce, the grilled chicken breast, sliced tomato, sliced pickles, and thinly sliced red onion. Add the top bun and serve!
Tips for Making Grilled Chicken Sandwiches
- If your sliced chicken breast isn’t all the same thickness, pound the thicker part out a bit. The chicken will cook more evenly if it’s all about the same thickness.
- Marinate the chicken for at least 30 minutes and up to 8 hours. The marinade is going to add tons of flavor and also tenderize the chicken.
- Don’t forget to preheat the grill or grill pan. A hot grill is the secret to getting that perfect sear on the outside and preventing it from sticking to the grill grates.
- Don’t overcook the chicken. Once it reaches 165 degrees internally at it’s thickest point, pull it off the grill!

Making Grilled Chicken Sandwiches Ahead of Time
This is one of my favorites because you can marinate the chicken ahead of time! Prep the marinade in the morning and by dinner time, your chicken is tender, flavorful, and ready to be grilled! You can also grill the chicken breasts ahead of time and then reheat and enjoy leftovers all week!
Storing Leftover Grilled Chicken
Store grilled chicken in an airtight container in the fridge for 3-4 days.
Reheating Grilled Chicken Sandwiches
My favorite way to reheat grilled chicken is on the grill over medium heat or in a grill pan over medium heat. Brush the grill with a bit of oil before adding the chicken so it doesn’t stick. Cook just until warmed through to avoid drying out the chicken.

Ingredients
- 2 large boneless, skinless chicken breasts (about 1 1/2 pounds total)
- 3 tablespoons olive oil, + more for brushing the grill
- 2 tablespoons dill pickle juice
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Kosher salt
- fresh cracked pepper
Serve With
- 4 sesame seed buns
- honey mustard dressing or mayonnaise
- green leaf lettuce
- sliced tomatoes
- hamburger dill chips (sliced pickles)
- thinly sliced red onion
Instructions
- Combine olive oil, pickle juice, Dijon mustard, garlic powder, onion powder, and paprika, along with a couple pinches of salt and pepper in a shallow dish.
- Slice each chicken breast in half lengthwise, creating 4 thin chicken breasts. You can also pound the chicken out a bit to make the chicken thinner as well. Place chicken into the marinade, making sure it’s completely covered. Cover and let it marinate in the fridge for 30 minutes. You can also marinate the chicken in a large Ziploc bag if you prefer.
- Preheat the grill on high heat. Reduce heat to medium-low and oil the grill grates. Use tongs to carefully place the chicken onto the grill. Cook for 3-5 minutes per side or until the chicken has beautiful grill marks on the outside and is cooked through on the inside.

I made this yesterday for dinner. It was delicious!! My husband doesn’t like to try new recipes but he said this one is a keeper. WHOOT WHOOT!! I only marinated the chicken for 20 minutes but it still tasted amazing! Next time I will marinade overnight and really let the flavors come together. Thank you for sharing this recipe!
