Dense Bean Taco Salad
This dense bean taco salad has three kinds of beans, massaged kale, charred corn, and Cotija, tossed in a smoky chipotle lime vinaigrette. It’s the kind of salad that actually gets better as it sits in the fridge. This one is meal prep gold!

If you’ve been on the internet lately, you know dense bean salads are having a moment. And honestly? They’ve earned it. Beans are cheap, nutritious, and they soak up dressing like it’s their job. This version leans into taco night with black beans, pinto beans, jalapeño, cilantro, Cotija — but the real star is the dressing. Chipotles in adobo get blended with apple cider vinegar, lime, honey, and garlic, and it turns smoky and creamy with a subtle sweetness.
Here’s what you’ll need.

Here’s how it all comes together.
MAKE DRESSING. Add olive oil, apple cider vinegar, lime juice, honey, lime zest, chipotles in adobo, cumin, Dijon, garlic, and a couple large pinches of salt and pepper to a medium bowl. Whisk until well combined and emulsified.
WILT KALE. Add chopped kale to a large bowl and drizzle with a couple tablespoons of the dressing. Use your hands to gently massage the kale for a minute or two until it becomes brighter green and begins to wilt.

ASSEMBLE SALAD. Add black beans, pinto beans, edamame, corn, bell pepper, jalapeño, red onion, and cilantro to the bowl of kale.

DRESS + TOSS. Drizzle with dressing and toss to coat everything evenly.

CHILL. Transfer the salad to the fridge and let it chill for at least 2 hours and up to overnight before serving. This allows the flavors to really meld and marry.

GARNISH + SERVE. Toss salad once more to coat everything in the dressing. Serve with crumbled Cotija cheese, sliced avocado, a drizzle of cilantro lime sauce, and tortilla chips. Enjoy!
Top tips for making this recipe.
- Massaging the kale is a must. If you’re not massaging your kale, you are missing out! It mellows both the flavor and the texture of the kale, and it adds a delicious freshness to this dense bean taco salad recipe.
- Add more or less chipotles in adobo based on your personal preference. It’s a smoky heat that really lends itself well to this veggie-packed salad, and it’s not super spicy when mixed with all the other ingredients. If you’re wary, add just 1 teaspoon at first and then add more to taste.
- If you have an immersion blender, use it to make this dressing super smooth and creamy.

A meal prep lover’s dream.
- This salad was practically built for making ahead.
- Prep the salad (except the avocado and Cotija garnish) up to 3 days in advance and store it in an airtight container in the fridge.
- The flavor actually improves on day two as the beans marinate.
- Add fresh avocado and the remaining Cotija just before serving.
- The vinaigrette on its own keeps in the fridge for up to a week. Shake or whisk before using. Season to taste with salt before serving.
Here’s what I’d serve with this dense bean salad.

- chicken bacon ranch wraps
Just in case you have leftovers.
- Store leftovers in an airtight container in the fridge for 3-4 days.
- If you know you’ll have leftovers, hold back the avocado and Cotija and add it fresh to each serving.
