Easy BBQ Chicken Sliders Recipe
These BBQ chicken sliders are the ultimate combination of savory, sweet, and cheesy goodness. With minimal prep and just one baking sheet, this recipe is a breeze to make. Rotisserie chicken, tangy BBQ sauce, and melty cheese are layered on fluffy Hawaiian rolls, then brushed with buttery cilantro topping for a flavorful, easy meal that everyone will love.
Ingredients for BBQ Chicken Sliders
- Rotisserie Chicken: You can use any cooked chicken for this recipe. I love the ease and deliciousness of rotisserie chicken but leftover baked chicken or grilled chicken thighs would work too!
- BBQ Sauce: Use your family’s favorite barbecue sauce for these sliders or make your own at home!
- King’s Hawaiian Rolls: There is nothing quite like a sweet Hawaiian roll. It’s pillowy soft on the inside but sturdy enough to hold all the delicious BBQ chicken and cheese! Any slider bun will work though!
- Cheese: Shred your own cheese so it melts easily and gets super ooey gooey. I like to use a combination of pepper jack and medium cheddar. Use your favorite melty cheese.
- Bell Pepper & Onion: Fresh pepper and onion add the perfect amount of crunch and fresh flavor! Pickled onions are another family favorite!
- Topping: I like to brush the top of the slider buns with melted butter mixed with fresh chopped cilantro. It adds rich, buttery flavor with a pop of brightness from the cilantro. You can skip it if you like or use parsley instead.
How to Make BBQ Chicken Sliders
Prep the Rolls: Heat oven to 350°F. Slice Hawaiian rolls in half horizontally to create two slabs. Place the bottom slab on a greased or parchment-lined baking sheet and bake for 5 minutes.
Prepare the Chicken: In a large bowl, combine shredded chicken with BBQ sauce until well coated.
Assemble the Sliders: Sprinkle 2/3 of the shredded cheese evenly over the bottom slab of rolls.
Spread the BBQ chicken mixture on top, followed by diced green bell pepper and red onion.
Add the remaining 1/3 of the cheese and place the top slab of rolls over everything.
Butter Topping: Combine melted butter with chopped cilantro and brush it generously over the top of the rolls.
Bake: Cover with foil and bake for 10–15 minutes, or until the cheese is melted and the sliders are heated through. Slice into individual sliders and serve warm!
Tips for Making the Best BBQ Chicken Sliders
- Customize the Sauce: Use your favorite BBQ sauce—sweet, smoky, or spicy—to suit your taste.
- Cheese Options: Swap out cheddar and pepper jack for Monterey Jack, mozzarella, or a smoky gouda for a different flavor.
- Veggie Variations: Add jalapeños for a kick of heat or swap the peppers for diced pineapple for a sweet twist.
Make-Ahead Instructions
- While these sliders taste best fresh from the oven, you can prepare the individual components up to 2 days in advance.
- Mix the chicken and BBQ sauce, dice the pepper and onion, and shred the cheese ahead of time.
- That way everything is ready to go when you want to throw it together and bake it!
Storing Leftovers
Store leftover sliders in an airtight container in the refrigerator for up to 3 days.
Reheating BBQ Chicken Sliders
- Oven: Wrap sliders in foil and reheat at 350°F for 10–12 minutes.
- Microwave: Heat on a microwave-safe plate for 30–60 seconds until warmed through.
