  • 2 large boneless, skinless chicken breasts

  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 8 ounces cream cheese, room temperature
  • 4 ounces sharp cheddar cheese
  • 1/3 cup thinly sliced green onions
  • Kosher salt

Instructions

  1. Heat a large saute pan over medium heat. Add bacon and cook, flipping as needed, until crispy. Set aside. Pour off all bacon grease except 1 tablespoon.
  2. Slice each chicken breast in half lengthwise to create 4 thinner pieces of chicken. Season chicken on all sides with garlic powder, paprika, salt, and pepper.
  3. Cook chicken in the bacon grease until golden brown on both sides and cooked through. Remove from pan and set aside.
  4. Melt butter in the pan and add jalapeno. Cook, stirring frequently, for 4 minutes. Add garlic and a couple large pinches of salt and pepper, and cook, stirring frequently, for 30 seconds.
  5. Add flour and cook, stirring frequently, for 1 minute.
  6. Slowly stir in chicken broth until the flour mixture dissolves into it. Add cream cheese and shredded cheese and stir until it melts and forms a sauce. Season to taste with salt and pepper.
  7. Nestle chicken breast into the sauce and cook for a minute or two until warmed through.
  8. Garnish with sliced green onion and crumble bacon over the top. Enjoy!
