Greek Tomato Onion Cucumber Salad

Ingredients and Substitutions
- Cucumbers – English cucumbers, regular cukes, or mini cukes will work for this recipe. Sometimes I’ll use all 3 if that’s what I’ve got on hand!
- Diced Feta – I really prefer the flavor and texture of the feta cheese that comes in a block in brine. If you can only find crumbled, that will work just fine, too.
- Grape Tomatoes – You can use cherry tomatoes or even a nice ripe diced tomato in place of the grape tomatoes. I like the bite-size grape tomato because it blends easily with the other ingredients.
- Red Onion – You could use white onion in place of the red onion in this cucumber salad. You could also dice the red onion finely if you have folks who might not be super into onions.
- Fresh Dill – The fresh dill really adds a ton of bright flavor and color to this salad. Dried dill would work in its place, but try using about half the amount, as dried dill has a much more concentrated flavor.
- Olive Oil – Try to find an olive oil that is cold-pressed and organic for best flavor.
- Balsamic Vinegar – This is our family’s favorite brand of balsamic vinegar. You can also use white balsamic vinegar, white wine vinegar, or red wine vinegar in place of the balsamic.
- Dijon Mustard – If you’re not into Dijon mustard, you can omit it, but it adds a delicious depth of flavor!
- Fresh Garlic – Finely minced garlic is going to add SO MUCH flavor to this dressing with minimal prep work! Don’t skip it and try not to use jarred minced garlic – fresh is best!
Instructions
Add cucumbers, feta, tomatoes, red onion, and dill to a medium sized bowl.
In a mason jar combine olive oil, balsamic vinegar, Dijon mustard, garlic, and a couple pinches of Kosher salt and pepper. Cover and shake vigorously until emulsified. Pour half the dressing over the salad.
Toss gently to coat evenly.
Transfer to serving platter and drizzle with remaining dressing just before serving. Garnish with fresh dill and enjoy!
Tips
- This onion cucumber salad is NOT a great make-ahead side dish. The vinegar in the dressing is going to start breaking down the cucumbers once everything is tossed together, so it’s best to enjoy this salad just after making it. However, you can prep the components separately and have them ready to go, so all you have to do is assemble!
- If you’re prepping the ingredients ahead of time, go ahead and slice the cucumber, onion, tomato, dill and feta. And then prepare the dressing in a mason jar. When you’re ready to serve the salad, just combine the ingredients, toss and serve!
FAQ
Nope! I am not trying to do more work than I have to and peeling cucumbers just takes up extra time and isn’t necessary. I like the extra crunch that the cucumber skin gives and love the contrast of colors that it offers as well.
Like I mentioned above, this cucumber salad tastes best when made fresh and enjoyed right away. Eating this salad immediately means that the cucumbers won’t have time to get watery! If you are very averse to any sort of extra moisture, you can toss the sliced cucumbers with a couple teaspoons of salt in a colander. Then rinse and gently dry cucumbers and continue making the salad as directed in the recipe card.
