Super Easy Cheeseburger Pie Recipe
A golden, flaky puff-pastry pie crust stuffed with seasoned ground beef and melty cheddar. Everything you love about a backyard cheeseburger, cut into slices, for a fuss-free weeknight dinner.

Easy Cheeseburger Pie Recipe
- Big burger flavor. Sharp cheddar, relish, ketchup, and a kiss of Dijon give every bite that unmistakable cheeseburger taste.
- Delicious twist on a family favorite. This cheeseburger pie has all your family’s favorite flavors of burger night but tucked, nice and tidy, into a puff pastry crust. Something new that everyone will want to try!
Ingredients for Cheeseburger Pie
- Ground Beef: 80/20 will give you the juiciest cheeseburger pie with the most flavor. 85/15 will work also, but anything leaner (like ground chicken or ground turkey) and you’ll sacrifice flavor.
- Yellow Onion: Adds gentle sweetness and moisture. White onion works too.
- Spices: Garlic powder and onion powder add tons of flavor in just seconds to the ground beef mixture.
- Sweet Pickle Relish: Delivers that signature burger-joint tang. Dill relish or chopped dill pickles could stand in.
- Ketchup: Sweet tomato backbone; barbecue sauce or chili sauce changes the vibe nicely.
- Dijon Mustard: Sharp acidity to balance richness. Yellow or spicy brown mustard also be delicious.
- Worcestershire Sauce: The burst of umami boosts the beefy flavor. Soy sauce plus a splash of vinegar is a handy substitute.
- Sharp Cheddar Cheese: Melts into gooey pockets; Colby-Jack or mozzarella would be delicious too.
- Puff Pastry Sheets: Ready-made layers keep things speedy. Pie crust is a solid alternative.
- Egg Wash (Egg + Water): Gives the crust a glossy finish. Milk alone works if you don’t have eggs on hand.
- Sesame Seeds: Sesame-bun finish; poppy seeds or everything-bagel seasoning are fun swaps.
How to Make Cheeseburger Pie
Brown the beef. In a large saute pan or large skillet over medium-high heat, cook ground beef with salt and pepper until no pink remains.
Sautรฉ the aromatics and vegetables. Stir in diced onion, garlic powder, and onion powder; cook until the onion softens, about 3 minutes.
Add the burger fixings. Remove the pan from heat and fold in relish, ketchup, Dijon, Worcestershire, and another pinch of Kosher salt and black pepper.
Line the pie dish. Roll one puff-pastry sheet slightly larger than an 11ยฝ-inch deep-dish pie plate and press it into the greased dish. Poke with a fork all over.
Bake and fill. Bake the crust for 10-15 minutes. Spoon the warm beef mixture into the crust.
Add cheese. Top the meat mixture with shredded cheese.
Cap and seal. Roll the second pastry sheet to fit, lay it over the filling, trim excess, then fold and crimp the edges to seal.
Finish the crust. Brush the top with egg wash, sprinkle with sesame seeds, and cut four small vents in the center.
Bake. Slide the pie into a 400ยฐF oven for 25โ30 minutes, tenting the edges with foil if they brown too quickly, until the pastry is puffed and deep golden.
Rest and serve. Cool 5 minutes before slicing. Serve with my homemade burger sauce, lettuce, diced red onion, and pickle chips on the side.
Tips for Making Cheeseburger Pie
- Don’t skip the homemade burger sauce! It takes just minutes to whisk together, and it’s the perfect tangy, creamy accompaniment for this cheeseburger pie recipe. Your whole family will love it!
- Keep puff pastry cold. If it starts to soften as you’re prepping, pop it back into the fridge for a few minutes.
- Drain excess grease after browning the beef to ensure the bottom crust stays crisp.
- Shred your own cheese for the best melting and optimal flavor.
- Make mini cheeseburger pies by pressing pastry into jumbo muffin tins and baking 18โ20 minutes.
Variations
You can completely transform this cheeseburger pie by adding some of your family favorites like:
- crumbled bacon
- pickled sliced jalapeno
- pickled red onion
- a few drizzles of BBQ sauce
- pepperjack cheese
Some cheeseburger pie recipes use Bisquick baking mix or a biscuit mix, but I much prefer the flavor, texture, and ease of puff pastry instead.
Make-Ahead Instructions
- Prep the filling up to 2 days ahead and refrigerate in an airtight container.
- Assemble and bake, adding about 5 extra minutes to the bake time.
- A fully baked pie also reheats beautifully (see below).
Storing Leftovers
- Cover cooled slices and refrigerate for up to 4 days.
- The pastry stays flakiest if wrapped loosely in foil rather than plastic.
Freezing Cheeseburger Pie
- Assemble but do not bake.
- Wrap the entire unbaked pie tightly in two layers of plastic wrap and foil and place in a freezer-safe Ziploc bag.
- Freeze for up to 2 months.
- Bake from frozen at 375ยฐF for 45โ50 minutes, shielding edges if needed.
- Baked leftovers can also be frozen in individual pieces for quick lunches.
Reheating Cheeseburger Pie
- Reheat slices on a parchment-lined baking sheet in a 350-degree oven for 10โ12 minutes (15-20 or longer if frozen) until the crust is crisp and the center is hot.
- Avoid microwaving as it will make the puff pastry soggy.
Serving Suggestions
- oven baked fries
- roasted herby potatoes
- creamy garlic mashed potatoes
- air fryer green beans
- air fryer asparagus

- Heat a large saute pan over medium-high heat. Add ground beef and a couple pinches of salt and pepper and cook, crumbling with a spatula until browned and cooked through.
- Add onion, garlic powder, onion powder, and a couple pinches of salt and pepper. Reduce heat to medium and cook for about 3 minutes, stirring occasionally.
- Remove from heat and stir in relish, ketchup, Dijon mustard, Worcestershire sauce, and a couple large pinches of salt and pepper.
- While the meat and onions are cooking, lightly grease an 11.5 inch deep dish pie pan, roll out 1 sheet of puff pastry dough on a lightly floured work surface. Press it into the pie pan, trimming any excess.
- Prick the crust all over with a fork. Bake for 10-15 minutes or until the edges just start to turn golden brown. Pop any air bubbles as it bakes.ย
- Add meat mixture to the bottom crust. Then top with shredded cheese.ย
- Roll out the second puff pastry sheet on a lightly floured work surface. Top the meat/cheese with the second pie dough, trim the excess, leaving about a 1/2 inch of overhang, and then fold and crimp to seal the edges.ย
- Brush with the egg wash in a thin, even layer. Top with sesame seeds. Cut 4 slits in the center for steam to escape.
- Bake for 25-30 minutes or until the puff pastry crust is cooked through and dark golden brown. If the edges are dark golden brown before the middle, form a flat ring of tin foil and cover the edges, leaving the center exposed, and continue baking.ย
