Easy Meal Prep Oatmeal Bowl

This quick and easy meal prep oatmeal is perfect for those who don’t like the mushy texture of traditional oatmeal! You can still enjoy all the health benefits of rolled oats by pairing them with your favorite yogurt, fruit, nuts and seeds!

How do I make this oatmeal breakfast?

You’ll start with half a cup of dry old fashioned rolled oats. Then add a splash of full fat coconut milk, then a big dollop of your favorite yogurt (mine is Maple Brown Cow Yogurt – which I almost always accidentally call brown bear yogurt…), lots of fresh fruit, nuts, seeds and a hearty squeeze of local Wisconsin honey.

This breakfast is simple, healthy and filling – which is why it’s my favorite!

What makes this oatmeal different (AKA better!) than the others?

My favorite oatmeal breakfast is perfect for those who don’t like the mushy texture of traditional oatmeal!  If you’ve been hanging around the blog long enough you also know about my neurotic aversion to anything soggy. Which is why I don’t typically eat oatmeal. It’s basically just a big bowl of warm soggy.

However, I have discovered the secret to enjoying all of the health benefits of oatmeal, without any of the sogginess! Don’t cook the oatmeal!

You still get the flavor and texture from the oats (and all the health benefits) but none of the sogginess!

Is this oatmeal a good meal prep recipe?

Yes! This is one of my FAVORITE meal prep recipes. You can make several servings of this during your meal prep session and then breakfast is done for the week!

During a busy work week a portable breakfast is a must for me and this one is always at the top of my list!

Ingredients

  • 1/2 cup old fashioned rolled oats
  • 1/2 cup your favorite yogurt
  • 1/2 cup your favorite fruit
  • 1/2 cup your favorite nuts and seeds
  • 2 tablespoons full fat coconut milk
  • 1 tablespoon honey

Instructions

  1. Add all ingredients to a bowl and enjoy!

Notes

This breakfast is perfect in a 16 oz. mason jar if you are taking your breakfast on the go!
